Preheat the oven to 350°F (180°C).

In a bowl, cream together the softened butter and granulated sugar until light and fluffy.

Add the egg, fresh lemon juice, and lemon zest to the mixture and mix until well combined.

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

If using, add yellow food coloring and mix until the desired color is achieved.

Scoop the dough and roll into balls, then coat in powdered sugar.

Place the coated dough balls on a baking sheet lined with parchment paper.

Bake in the preheated oven for 12 minutes.

Remove from the oven and let cool before enjoying.
