Pour 1 teaspoon of oil into a pan and heat over medium to low heat.
Add 3 to 4 cloves of roughly chopped garlic and sauté.
Add 1 chopped onion and sauté until transparent or translucent.
Add 1 cup of chopped baby spinach and cook until it shrinks to half its size.
Add 2 finely chopped carrots, 1 shredded zucchini, and 1 bell pepper; mix well.
Add 1/2 cup of corn kernels and mix everything together.
Add 1/2 teaspoon of dried basil, 1/2 teaspoon of dried oregano, and 1/2 teaspoon of dried thyme; mix well.
Add 1 teaspoon of red chili powder, 1/2 teaspoon of turmeric, and 1/2 teaspoon of garam masala; mix well.
Add a jar of your favorite pasta sauce and mix everything together; taste and add salt if needed.
In a mixing bowl, combine 1 and 1/4 cup of roughly chopped mozzarella, 1 cup of shredded parmesan, 1/4 cup of pecorino romano cheese, and 15 ounces of ricotta cheese; mix well.
Add 1 cup of heavy cream and mix well.
Add 1 teaspoon of Italian seasoning and mix again.
In a pot of boiling salted water, cook the lasagna noodles according to package instructions for about 8 minutes until al dente; strain and set aside.
In an oven-safe baking tray, add 1 teaspoon of olive oil to prevent sticking.
Spread a small layer of sauce and veggies at the bottom of the pan.
Add a layer of lasagna noodles, followed by sauce and veggies, then cheese mix; repeat layers until the tray is filled.
Cover the dish with aluminum foil and bake in the oven at 350°F for 20 minutes.
Remove the foil and bake for an additional 5 to 10 minutes until done.
