Crack 4 large eggs into a mixing bowl.
Use a hand mixer to whip the eggs for about 30 seconds until creamy and yellow.
Add 1/2 cup of white sugar, 1 teaspoon of vanilla extract, and 1/2 teaspoon of salt to the eggs and mix together.
Heat 4 cups of milk to 180 degrees Fahrenheit, either in the microwave or on the stove.
To temper the eggs, scoop out about 1 cup of the hot milk and slowly drizzle it into the egg mixture while the mixer is running.
Once tempered, slowly drizzle in the remaining hot milk into the egg mixture.
Scoop off any bubbles that form on top of the milk-and-egg mixture using a measuring cup, being careful not to remove any egg mixture.
Fill 10 six-ounce ramekins equally with the custard mixture without greasing them.
Sprinkle nutmeg on top of each filled ramekin.
Prepare a water bath by pouring hot water into a large 10 by 15 baking pan, ensuring the water comes up at least halfway on the ramekins.
Preheat the oven to 350 degrees Fahrenheit and carefully transfer the baking pan with ramekins to the oven.
Bake for 35 to 40 minutes, checking for doneness by inserting a knife into the center of one of the cups; it should come out clean.
Once baked, transfer the ramekins to a wire rack to cool completely for at least 10 minutes before serving.
