In a bowl, combine 1 cup of whipping cream with 4 beaten eggs.
Add 1/4 cup of dry mustard, 2 teaspoons of salt, and 2/3 cup of white vinegar to the cream and egg mixture.
Whisk the ingredients together until combined.
Add the remaining 1 cup of whipping cream to the mixture and stir.
Taste the dressing to see if it needs more sugar, adjusting as necessary.
Combine the spinach, chopped apple, and salted peanuts in a large bowl.
Pour the warm dressing over the spinach salad and mix well.
