Grate zucchini using a box grater on the larger side into a flat bowl until you have about 2 cups.
Sprinkle a little salt over the grated zucchini and toss it to help draw out the juices. Let it sit for about 5 minutes.
Whisk together 2 eggs in a separate bowl until combined and slightly frothy.
Squeeze out the excess juices from the zucchini using a strong paper towel or a regular towel, pulling the corners and twisting to remove the liquid.
Add the squeezed zucchini to the bowl with the whisked eggs and mix together.
Incorporate 0.5 cups of whole wheat flour into the zucchini and egg mixture, mixing until just combined.
Preheat a pan over medium heat and add enough oil to generously cover the bottom of the pan.
Using an ice cream scoop, portion out the zucchini mixture into the pan, flattening each scoop slightly as you place it down.
Cook until the edges are crispy, then flip using a flat spatula to cook the other side until golden brown.
If cooking in batches, place cooked fritters on a cooling rack to keep them crispy and avoid sogginess from steam.
Serve hot with sour cream on top and garnish with chopped green onions.
