Make caramel sauce by melting 4 tablespoons of unsalted butter in a saucepan over medium-low heat.
Add 1 cup of packed light brown sugar, a pinch of kosher salt, and 1/2 cup of evaporated milk to the melted butter; stir and cook until thickened.
Remove from heat and stir in 1 teaspoon of pure vanilla extract; let cool completely.
Peel, core, and slice 3 large Granny Smith apples into thin wedges.
In a bowl, combine the sliced apples with 1 tablespoon of freshly squeezed lemon juice, 1 cup of white sugar, 1/4 cup of packed light brown sugar, 2 tablespoons of cornstarch, 1 tablespoon of ground cinnamon, 1/4 teaspoon of ground nutmeg, a pinch of ground allspice, and a pinch of kosher salt; stir until well blended.
Scoop the apple mixture into a 9-inch pie crust, including the glaze.
Drizzle 1/2 cup of the homemade caramel sauce over the apples and add 2 tablespoons of unsalted butter cut into cubes on top.
Cover the pie with a top crust, either whole or in strips (lattice style).
Make an egg wash with 1 egg and 1 tablespoon of water; brush it on top of the crust.
Sprinkle a little white sugar on top of the crust.
Bake in a preheated 400°F oven for about 50 minutes until golden brown.
Let the pie cool completely before serving.
