Mix together 2 eggs at room temperature and 3/4 cup (150g) sugar for 1 minute.
Add 1/2 cup (120ml) vegetable oil to the egg and sugar mixture.
Stir in 1 tsp (3g) cinnamon.
In a separate bowl, combine 1 1/3 cups (166g) all-purpose wheat flour, 2 tsp (8g) baking powder, and 1/4 tsp (1g) salt.
Add the dry mixture to the wet ingredients and stir gently until just combined; do not overmix the batter.
Fold in 2 medium apples that have been peeled, cored, and diced.
Prepare a 20x20cm square pan by lining it with parchment paper.
Preheat the oven to 350°F (180°C).
Pour the batter into the prepared pan and spread it evenly.
Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
Let the cake cool completely to room temperature.
In a bowl, combine 2/3 cup (85g) powdered sugar with about 1 1/2 Tbsp (20ml) milk, adding the milk a bit at a time until it forms a smooth glaze.
Let the glaze sit at room temperature for 20-30 minutes to dry and set.
