Empty 2 packets of active dry yeast into a large mixing bowl.
Warm 1 cup and 2 tablespoons of water in the microwave for about 20 seconds until it reaches about 110°F.
Pour the warm water into the mixing bowl with the yeast.
Add 1/4 cup of sugar to the yeast and water mixture.
Stir until the yeast is dissolved.
Let the mixture sit for 1-2 minutes until the yeast activates and bubbles up.
Add 1 teaspoon of salt, 1/4 cup of melted butter, and 1 egg to the mixture.
Mix everything together.
Gradually add about 2.5 cups of flour, about half a cup at a time, stirring until a dough forms that pulls away from the edges of the bowl.
Lightly flour a clean work surface and transfer the dough onto it.
Pinch off a piece of dough and roll it into a ball on the countertop.
Let the dough balls rise and prove for about 20 to 40 minutes until they double in size.
Preheat the oven and place the rolls in for 25 minutes, checking around the 20-minute mark.
Remove the rolls from the oven and slather melted butter on top.
