Add 6 cups of bread flour to the mixing bowl, adjusting to 6 1/2 cups if needed based on the dough's consistency.
Incorporate 2/3 cup of instant dry milk powder into the mixture.
Add 2 teaspoons of salt to the bowl, pouring it away from the other ingredients to avoid overpouring.
Knead the dough in the stand mixer on speed two for 5 minutes, checking for consistency and adding more flour or water if necessary.
