Warm 1/4 cup of heavy cream in the microwave for 15 to 20 seconds until it reaches 120°F.
Place the bowl of warm cream on top of the preheating oven to keep it warm.
Stir in 1 and 1/4 teaspoons of dry active yeast into the warm cream and let it sit for 10 minutes until it becomes murky and bubbly.
In a large bowl, combine 2 cups of almond flour, 1/4 cup of oat fiber, 2 teaspoons of powdered alulose, 1 teaspoon of baking powder, and 1/2 teaspoon of salt.
Add 4 tablespoons of softened unsalted butter (cubed), 2 egg whites, and 4 teaspoons of sour cream to the dry ingredients.
Pour in the yeast mixture and mix with an electric mixer on low speed until just combined, being careful not to overmix.
In a separate bowl, mix 2 teaspoons of psyllium husk powder with 1/4 cup of warm water until a thick jelly-like texture forms, then add it to the dough and mix until combined.
Divide the dough into 8 equal-sized balls, rolling them with wet hands to prevent sticking.
Place the rolls on a parchment-lined baking tray and cover with a towel to rise in a warm location for about 30 minutes.
Preheat the oven to 350°F while the rolls rise.
After 30 minutes, mix an egg white with 1 tablespoon of milk or cream and brush it on top of the rolls for a golden crust.
Bake the rolls in the oven at 350°F for 16 to 18 minutes or until golden brown on top.
Remove from the oven and let cool for a few minutes before serving, optionally brushing with melted butter.
