Fresh Yeast Rolls

Cultural Context

Fresh yeast rolls are a staple in American households, often served during family gatherings and holidays. Their soft, fluffy texture and buttery flavor make them a beloved accompaniment to meals. While variations exist globally, the basic concept of using yeast to leaven bread is universal, allowing for countless adaptations.

1

In a large deep skillet over medium low heat, add 1 cup evaporated milk, 1/4 cup buttermilk, 1/4 cup packed light brown sugar, and 1/4 cup honey. Stir until combined and add 1/2 cup butter flavor shortening until melted, then remove from heat and let cool to 115°F.

2

Measure 3 3/4 cups bread flour, reserving 1 1/4 cups for later. In a bowl, combine the remaining flour with 1 teaspoon table salt and 2 1/4 teaspoons active dry yeast. Whisk until blended.

3

Pour the cooled milk mixture into the flour mixture and stir until well incorporated.

4

Add 1 lightly beaten extra large egg and stir until combined.

5

Gradually add the reserved bread flour until well combined, being careful not to overmix.

6

Dust a work surface with flour and knead the dough a few times until soft and not sticky, then place in a greased bowl, cover with plastic wrap, and let rise in a warm place for about 2 hours until doubled in size.

7

Punch down the risen dough and divide it into pieces, rolling each into a ball and placing them in a greased 9x13 baking pan.

8

Brush the rolls with melted honey butter and cover with plastic wrap. Let rise for 1 hour until doubled in size.

9

Preheat the oven to 400°F and bake the rolls for about 12 minutes until golden brown. Optionally, place under the broiler for a few seconds for extra browning.

10

Brush with more honey butter after baking.
