Instructions

  1. 1Boil water in a large pot and add salt.
  2. 2Cook cavatelli pasta according to package instructions until al dente, about 3-5 minutes.
  3. 3Drain the pasta and reserve a cup of pasta water.
  4. 4Heat olive oil in a large skillet over medium heat until shimmering.
  5. 5Add chopped garlic and onion, sauté until translucent, about 2-3 minutes.
  6. 6Stir in crushed tomatoes and bring to a simmer.
  7. 7Add basil, salt, black pepper, and red pepper flakes to taste.
  8. 8Incorporate cooked cavatelli into the sauce, tossing to combine.
  9. 9If the sauce is too thick, add reserved pasta water a little at a time.
  10. 10Add spinach and cook until wilted, about 1-2 minutes.
  11. 11If using, add cooked sausage, mushrooms, zucchini, and carrot, stirring until heated through.

  • 2 cups orecchiette pasta
  • 4 cups water
  • 1 tsp salt
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp red pepper flakes
  • 1 cup broccoli florets
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. 1Bring 4 cups of water to a boil in a large pot.
  2. 2Add 1 tsp of salt to the boiling water.
  3. 3Add the orecchiette pasta and cook according to package instructions until al dente, about 10-12 minutes.
  4. 4In the last 3 minutes of cooking, add the broccoli florets to the pot with the pasta.
  5. 5Once cooked, drain the pasta and broccoli, reserving 1/2 cup of the pasta water.
  6. 6In a large skillet, heat 2 tbsp of olive oil over medium heat.
  7. 7Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
  8. 8Add the drained pasta and broccoli to the skillet, tossing to combine.
  9. 9If the mixture seems dry, add a little reserved pasta water to reach desired consistency.
  10. 10Stir in the grated Parmesan cheese and season with salt and pepper to taste.
  11. 11Serve hot, garnished with additional Parmesan if desired.
