Create a volcano shape with semolina flour on a surface.
Gradually add lukewarm water into the center of the flour and mix it in.
Knead the dough for 10 to 15 minutes until it is elastic and springs back when pressed.
Wrap the kneaded dough in a damp cloth to prevent air from getting in and let it rest for 20 minutes.
After resting, roll a piece of dough into a rope about half an inch wide.
Cut the rope into small pieces to form cavatelli shapes.
Use a gnocchi board or a fork to shape the cavatelli by pressing and rolling them to create grooves.
Alternatively, use the back of a cheese grater to create a grooved shape for the pasta.
