Brew tea of choice (black, white, or green) and cool it to room temperature.

Add the cooled tea to a glass brewing vessel or glazed ceramic (non-lead glaze).

Add 1 cup of sugar for every 4 litres of tea.

Pour in enough starter liquid and place the SCOBY on top (smoother side up).

Cover the vessel with a breathable material (like a napkin) and secure it with a rubber band.

Allow the mixture to ferment for 7 to 21 days, tasting after 7 days to check for desired sweetness or sourness.

Once fermentation is complete, remove the SCOBY and set it aside in a glass bowl.

Pour some starter liquid into the SCOBY bowl if brewing another batch immediately, or store the SCOBY covered in starter liquid in the fridge for several months.

For bottling, use Mason jars and cap them to trap carbon dioxide, creating a fizzy drink.

Store the bottled Kombucha in the fridge until ready to enjoy.
