Spray the shortbread mold with cooking spray and set aside.
Soften 2 sticks of butter at room temperature overnight, covered with cling film.
In a mixing bowl, combine the softened butter, 2 cups of flour, 3/4 cup of confectioners sugar, and a pinch of salt.
Mix the ingredients together using one hand until a dough forms.
Transfer the dough into the mold and smooth it out with your hands to create an even layer.
Bake the shortbread in the oven at 325°F for 30 to 35 minutes, checking at 30 minutes for a pale golden color around the edges.
Remove the shortbread from the oven and let it sit for 15 minutes.
Run a paring knife around the edges of the mold to help release the shortbread.
Carefully remove the shortbread from the mold and cut it into wedges while warm.
