Add Dutch Yellow Potatoes, Dry White Wine, Garlic, Salt, and Thyme into one pot and add enough water to cover the potatoes.
Bring to a simmer and cook until the potatoes are fork tender.
Drain the water.
In a small mixing bowl, add White Wine Vinegar, Salsa, Whole Grain Mustard, and Salt and Pepper.
Stir in Extra Virgin Olive Oil.
Add all ingredients into a large mixing bowl and mix together.
