6 eggs
2 tbsp milk

25g butter
125g Red Leicester Cheese, grated
1 bunch of spring onions, finely chopped
4 flour tortillas
Sprinkle of smoked paprika

Get a large frying pan, heat up the oil and fry the sausages for 5-6 minutes until they're lovely and golden.

Beat up the eggs, add the milk and pepper and salt the way you like it.

Melt the butter in a non-stick pan and put the eggs in. Stir them all the time until they are just lightly scrambled.

Stick in your cheese, spring onions and Quorn Sausages.

Put one of your tortillas in a hot frying pan, and then put a tenth of the scrambled egg over half the tortilla.

Fold it in half and flatten with a spatula.

Flip it over and cook until it's golden brown on both sides.

Tip the tortilla out of the pan and cut it in half, keeping it warm in deli grease proof paper while you cook the rest.
