Gently combine refried beans and salsa. Spread mixture on one tortilla. Spread avocado (or guacamole) on the other, making sure both the bean mixture and avocado remain 1/4 - inch from edge of tortilla.

Over medium heat, coat a small skillet with nonstick spray and butter. Add eggs and cook covered until egg whites begin to set, about 2 minutes. Flip eggs. Season with salt, pepper and ground cumin. Allow eggs to cook until desired doneness and remove skillet from heat.

Coat a large skillet with nonstick spray and set bean covered tortilla in skillet, bean-side up. Sprinkle with cheese and place eggs on top. Sprinkle cilantro on top of egg along with more cheese. Top with avocado (or guacamole) covered tortilla, avocado-side down.

Cook until browned on both sides, about 3 minutes per side. Slice and serve alone or with salsa.
