Greek yogurt reduces calories while maintaining creaminess
In a small bowl, combine buttermilk, fresh cream, and vanilla essence; mix and set aside.
In a mixing bowl, sift together flour, sugar, baking powder, baking soda, and a pinch of salt.
Add cold butter or margarine to the dry ingredients and rub it in until the mixture resembles breadcrumbs.
Fluff the mixture to remove lumps.
Add the wet ingredients to the dry ingredients in two stages, mixing gently until a crumbly, moist dough forms.
Flour the surface generously and place the dough onto it, forming it into a log.
Roll the dough to about 1 to 2 cm thick, depending on desired height of scones.
Cut the dough into shapes and place them on a baking tray lined with baking paper.
Brush the tops of the scones with a mixture of cream and vanilla essence for color.
Bake in a preheated oven at 200°C for 20 to 25 minutes until golden and fluffy.
