Greek yogurt reduces calories while maintaining creaminess

1

In a large saucepan, mix together 1 cup of sugar, 6 tablespoons of cornstarch, and 1/4 teaspoon of salt.

2

Add 4.5 cups of milk and 4 egg yolks, whisking everything together until well combined.

3

Cook the mixture over medium heat while whisking occasionally until it starts bubbling.

4

Once it begins to bubble, let it cook for about 1 to 2 minutes, then take it off the heat.

5

Add 2 tablespoons of unsalted butter and 3 tablespoons of vanilla extract, whisking until well combined.

6

Pour the mixture through a strainer into a large bowl to remove lumps.

7

Let the pudding cool to room temperature, then cover with plastic wrap and place in the fridge to chill for 2-4 hours or overnight.

8

Cut 2-3 bananas into slices and set them aside.

9

Once the pudding is chilled, add a bit of pudding at the bottom of your dish, then add a layer of Nilla wafer cookies.

10

Add a layer of bananas, then a quarter or a third of the vanilla pudding on top.

11

Repeat these layers until you run out of vanilla pudding.

12

Beat 4 egg whites with an electric mixer until frothy, then gradually add 1/4 cup of sugar.

13

Continue to beat the egg whites until stiff peaks form, then add the meringue on top of the vanilla pudding, covering the entire surface.

14

Brown the meringue using a torch or by placing it in the oven at 425 degrees for 5 minutes.

15

Chill until ready to serve or enjoy immediately.
