Start by using instant rapid rise yeast, preferably from the brand Anthony.
Mix wet ingredients: 6 ounces of plant-based milk, 15 grams of maple syrup, and 14 grams of Miocos vegan butter.
Warm the wet mixture in 30-second intervals until warm but not hot, then stir to combine.
Add instant dry yeast to the warm mixture and set aside.
In a separate bowl, combine dry ingredients: whole wheat all-purpose flour, 1 teaspoon baking soda, 1 teaspoon baking powder, and 1 heaping teaspoon of cinnamon.
Add wet ingredients to the dry ingredients and mix on low speed using a stand mixer for about 2-4 minutes until well combined, checking to avoid overmixing.
Transfer the dough to a greased bowl, cover with a warm kitchen towel, and let it rest for about 1 hour until doubled in size.
Preheat the oven to 350°F (175°C).
Punch down the dough to release air bubbles and flour the surface lightly.
Roll out the dough into a rectangle shape.
Prepare a cinnamon coconut sugar mixture with 3 tablespoons of coconut sugar and a heaping tablespoon of cinnamon.
Spread melted butter over the dough, leaving a half-inch edge without filling.
Sprinkle the cinnamon coconut sugar mixture over the buttered dough.
Optionally, add fillings like chocolate chips or pecans.
Roll the dough tightly from the edge with filling to the edge without filling.
Cut the rolled dough using dental floss for clean cuts, aiming for eight equal pieces.
Place the cinnamon rolls on a baking sheet lined with a silicone mat or parchment paper.
Brush the tops lightly with plant-based milk for a glossy finish.
Bake in the preheated oven for 20-25 minutes until golden brown.
While baking, prepare the cream cheese frosting using non-dairy cream cheese, maple syrup, and 1 tablespoon of plant-based milk to thin it out.
For a glaze, mix monk fruit sweetener with a small amount of plant-based milk until desired consistency is reached.
