Breaded Baked Tofu

400g firm tofu
2 tbsp nutritional yeast
2 tbsp ground almonds
2 tbsp tamari
1/4 tsp garlic powder
1/2 cup quinoa
1 cup vegetable stock
Juice of 1 lemon
1 cup thawed frozen peas
220g tenderstem broccoli florets
salt
pepper
olive oil

Preheat the oven to 200*C/400*F.

Slice the tofu, the thinner the slices the chewier they will be.

Place kitchen towels on a chopping board then arrange the tofu slices on top. Place more kitchen towels then press down with a heavy object (like a stone slate or a thick book on a plate). Leave for 15 minutes to remove excess water.

In a shallow bowl, mix together the nutritional yeast, ground almonds, and garlic powder.

In another shallow bowl, add the tamari.

Dip each tofu slice into the tamari, then coat with the batter.

Arrange the breaded tofu on a baking sheet. Bake for 20-25 minutes.

Arrange the broccoli florets on a baking sheet. Sprinkle with salt and pepper and a drizzle of olive oil. Give it a quick toss then place in the oven and bake for 15-20 minutes.

In the meantime, prepare your quinoa - add the dried quinoa to a small pan then pour in the vegetable stock. Cook on high until it starts to boil, then turn the heat down and leave to simmer for around 15 minutes or until all the water is gone.

Once the quinoa is cooked, pour in the lemon juice and fold in the peas.
