sprigs fresh thyme
garlic cloves, finely chopped
zest of 1 lemon
sea salt flakes and black pepper to taste

Preheat oven to 425°F with rack in the middle position.

Cut chicken into 1-inch chunks and place into a medium-sized bowl.

Prepare the marinade: Place all of the ingredients for the marinade in a small bowl and whisk together.

Pour marinade over chicken. Add the quartered lemon slices and toss everything together. Pour chicken mixture onto baking sheet, spreading it out evenly. Transfer to oven and bake for 20 minutes.

Prepare vegetables: Place tomatoes and green beans in a bowl. Drizzle with olive oil and sprinkle with salt. Toss to coat and combine.

Once the chicken has baked for 20 minutes, remove from oven and place on your work surface.

Pour vegetable mixture over the chicken. Sprinkle pan with capers, thyme, garlic and lemon zest. Toss everything together and spread it out evenly on the sheet pan.
