190 g or 1 cup blended canned pineapple (liquid removed)
225 g or 2 cups finely grated carrots
100 g or 1 cup roughly chopped walnuts or pecans
240 g or 2 cups powdered sugar
2 teaspoons melted unsalted butter

In a large bowl, combine 300 g (1 and 1/2 cups) soft light brown sugar, 3 large room temperature eggs, 200 g (1 cup) canola oil, 3 tablespoons vanilla extract, 110 g (1/2 cup) yogurt, and 190 g (1 cup) blended canned pineapple (liquid removed). Whisk for about a minute to incorporate air.

Add the sifted dry ingredients to the wet ingredients and gently fold until just combined, being careful not to overmix.

Fold in 225 g (2 cups) finely grated carrots and 100 g (1 cup) roughly chopped walnuts or pecans until just combined.

Pour the batter into the prepared Bundt pan and shake the pan lightly to help the batter settle into the corners.

Drop the Bundt pan lightly on the counter twice to remove large air bubbles.

Bake in the preheated oven for 45 to 50 minutes, or until a skewer inserted into the thickest part comes out clean with a few moist crumbs.

Spread the glaze over the top of the cooled Bundt cake, tapping the cake stand gently on the countertop if needed to help the glaze spread down the edges.
