Ukrainian Cabbage Rolls, known as Holodtsi, are a cherished dish in Ukrainian cuisine, traditionally made for family gatherings and special occasions. This dish reflects the agricultural roots of Ukraine, showcasing the use of local ingredients like cabbage and meat. Today, it has gained popularity beyond Ukraine, with variations appearing in many Eastern European countries, each adding their unique twist to the classic recipe.

Sauté 1 chopped onion in a skillet.
Add a 10 ounce bag of shredded carrots to the onions and sauté until slightly soft.
Add 1 small can of tomato paste and 2 tbsp minced garlic; mix for a few minutes.
In a bowl, combine 1 1/2 lbs ground beef and 1 lb ground chicken.
Add 2 eggs to the meat mixture.
Add the sautéed carrot and onion mix to the meat.
Add 1 cup chopped parsley, 1 tsp salt, 1 tsp pepper, and 1 tsp garlic powder; mix until combined.
Cook 1 cup brown rice according to package instructions.
Cut and pull out the core of 1 cabbage and place it in boiling water for 10-15 minutes until soft.
Puree 1 onion and 1 can of chopped tomatoes or tomato sauce.
Melt 3/4 of a stick of butter in a pan.
Add 1 tsp of flour to the melted butter and mix.
Pour the tomato mixture into the pan and mix.
Add 1/2 cup of water and 2 cups of sour cream to the mixture and mix well.
Gently separate the cabbage leaves from the head.
Fill each cabbage leaf with 1 tsp of the meat mixture and tightly roll, folding in the sides to seal.
Layer the cabbage rolls in a baking pan and pour half of the sauce over the first layer of rolls.
Repeat the steps until all cabbage rolls are used.
Place the pan into a pre-heated oven at 375°F for 60 minutes.
