Mix the strong white flour and wholemeal rye flour in a large bowl.
Dissolve the yeast in warm water and let sit until frothy, about 5 minutes.
Add the yeast mixture to the flour mixture along with dark brown sugar, milk, and melted butter.
Stir until a rough dough forms, then knead on a floured surface for 10-15 minutes until smooth.
Place the dough in a greased bowl, cover with a cloth, and let rise until doubled, about 1-2 hours.
Preheat the oven to 220°C (425°F).
Punch down the risen dough and shape it into a round loaf.
Place the loaf on a baking tray lined with baking paper and let it rise for another 30 minutes.
Optionally, score the top of the loaf with a knife and sprinkle with seeds or oats.
Bake in the preheated oven for 25-30 minutes until golden brown and hollow-sounding when tapped.
Cool on a wire rack before slicing.
