Wash the potatoes to remove some of the starch.
Slice the potatoes into wedges.
Add cold water or ice water to the potatoes and let them rest for about 30 minutes.
Drain the water from the potatoes and pat them dry with a clean towel or paper towel until no water is left.
Add melted butter to the potatoes (or any cooking oil if preferred).
Mix in all the seasonings including garlic powder, chili paste (or chili flakes), thyme, rosemary, parsley, black pepper, paprika, salt, and cornstarch until well combined.
Spread the seasoned potato wedges on a lined baking sheet with parchment paper.
Place the baking sheet in a preheated oven at 400 degrees Fahrenheit for 40 minutes, flipping the potatoes halfway through after 20 minutes.
After another 20 minutes, remove the potatoes from the oven and garnish with remaining diced herbs.
Serve immediately.
