Mix 1 cup of unsweetened soy milk or any other non-dairy milk with 1 tablespoon of apple cider vinegar or lemon juice and let it sit for about 5 minutes to curdle.

In a large bowl or food processor, combine 2 to 2.5 cups of all-purpose flour, 2 to 3 teaspoons of baking powder, 1 to 2 teaspoons of sugar, and 1 teaspoon of salt.

Cut 1 cup of cold vegan butter into small pieces and place it in the freezer for a few minutes to make it colder.

Add the cold butter to the dry ingredients and use a pastry cutter or pulse in the food processor until you get coarse crumbs.

If using a food processor, transfer the mixture back to a large bowl.

Pour in the vegan buttermilk, saving a little bit for brushing the tops later, and mix until the dough is just combined.

Transfer the dough to a lightly floured surface and gently shape it into a rectangle.

Fold one side of the dough into the center, then the other side, and turn the dough a half turn. Repeat this process two more times.

On the last fold, flatten the dough to about 1 inch thick and cut out circles using a biscuit cutter without twisting the cutter.
