Take 1/2 cup of solid coconut oil and put it in the refrigerator for about 15 minutes.
In a large bowl, combine 2 cups of all-purpose flour, 1 teaspoon of baking soda, 4 teaspoons of baking powder, and 1 teaspoon of salt; stir with a fork to blend.
Remove the coconut oil from the refrigerator and pinch off small pieces, adding them to the flour mixture while keeping them small.
Add 1 cup of almond milk to the mixture and stir until combined; the mixture may turn out too moist.
If the dough is too wet, gradually add tapioca flour until it reaches a wet dough consistency.
Instead of rolling out the dough, form drop biscuits directly onto a baking sheet.
Preheat the oven to 425°F (220°C) and bake the biscuits for 12-15 minutes.
Once baked, check the biscuits for doneness; they should be brown and look nice.
Taste the biscuits to ensure they have a nice flavor, reminiscent of buttermilk biscuits.
