Heat 3 cubes of Butter in a pan until it starts to melt.

Reduce the flame and add 1 tbsp of Garlic Paste; cook for a few seconds.

Add 1 and 1/2 tbsp of Plain Flour and mix, cooking until the flour changes color.

Slowly add in 1 and 1/2 cup of Milk while stirring to avoid lumps; bring to a boil.

Once thickened after 4-5 minutes, add 1/2 tsp of Pepper Powder, Salt to taste, and 2 tbsp of soft Cheddar Cheese, stirring until melted.

Slice 4 Potatoes to about 2 mm thick and soak in Salted water for 10 minutes, then drain.

Mix the Potatoes with the prepared Sauce and sprinkle in 1 tsp of crushed Oregano; combine well.

Layer the Potatoes in a baking dish, drizzling some Sauce over every two layers and sprinkling with finely Chopped Chives.

Top the final layer with more Sauce and place in a pre-heated oven at 160 degrees Celsius for 25 minutes.

After 25 minutes, remove from the oven, grate more Cheese on top, and return to bake for another 5-7 minutes until the Cheese melts and a golden crust forms.

Garnish with some Chives and Chili Flakes before serving.
