Combine the warm water, sugar (first half) and yeast and let it bloom for 10-15 minutes.

Whisk the egg, evaporated milk and remaining sugar.

Divide the flour into 3 additions. After the second addition, add the salt.

Change your whisk to spatula/scraper. Mix until it is combined.

Coat your hands with shortening to prevent dough from sticking. And gently massage the shortening into the dough. The dough will be sticky.

Grease the bowl with oil. Transfer the dough and coat it with oil. Cover it with cling wrap. Place in a warm area for 2 hours.

Remove excess air. Dust your work surface and your rolling pin.

Roll out the dough about 0.5 cm thick and cut it into 2x2 squares. Place them on a baking sheet and let them rest while heating the oil up to 350F.

Fry until golden brown. Remove excess oil.

Generously dust it with powdered sugar.

Serve immediately.
