1

Start by making a confit with shallots and a considerable amount of olive oil.

2

Simmer the shallots in very low heat.

3

Add whole mashed garlic cloves (peels and all), lemon peel, orange peel, sliced ginger, bay leaves, allspice, mixed peppercorns, coriander seeds, dried sage, and vegetables such as green onion, red pepper, yellow pepper, carrots, and tomatoes.

4

Add salt, pepper, and smoked paprika, and more olive oil if needed.

5

Cook everything on very low heat until the vegetables are cooked but not mushy, with subtle bubbles.

6

Transfer the mixture into a clean and sterilized container for marinating.

7

Press the firm or extra firm tofu to remove excess water and add it to the container.

8

Add a little sweetness with port wine, agave, or brown sugar if desired.

9

Top everything with extra olive oil to ensure the vegetables and tofu are fully submerged.

10

Close the container while hot and let it reach room temperature before refrigerating.
