Line a 15 by 10-inch baking sheet with parchment paper or foil, allowing for overhang.
Arrange approximately 20 graham crackers in a single layer on the lined baking sheet.
In a microwavable safe dish, add 226g (1 cup or 2 sticks) of butter, breaking it up for easier melting.
Add 240g (1 cup) of firmly packed brown sugar to the butter.
Heat the butter and brown sugar in the microwave on high for 30 seconds, then stir.
Continue heating in additional 30-second intervals until the butter is completely melted and the mixture is hot.
Add 1 teaspoon of vanilla extract to the melted mixture and stir until combined.
Pour the butter mixture evenly over the graham crackers, ensuring they are well coated.
Bake in the preheated oven for 10 minutes.
Remove from the oven and immediately scatter 320g (2 cups) of semi-sweet chocolate chips over the hot mixture.
Return to the oven for 2 minutes to allow the chocolate to melt.
Use a spatula to smooth the melted chocolate evenly over the graham cracker mixture.
Divide the bark into thirds for different toppings: add chopped pistachios to one third, dried cranberries to another, and broken pretzels and mini M&M's to the last third.
Melt white chocolate chips in the microwave in 30-second intervals, then drizzle over the toppings as desired.
Let the bark cool at room temperature for 2 to 3 hours to set, or refrigerate for about 1 hour for a quicker set.
Once set, break the bark into pieces and serve.
