Layer graham crackers on a baking sheet and set aside.
Put a pot over medium heat and add 1 cup of unsalted butter. Let it melt completely.
Add brown sugar and some water, stirring until combined and the butter is melted.
Insert a candy thermometer and let the mixture boil without stirring until it reaches 255°F.
Once it reaches 255°F, remove the candy thermometer and add vanilla extract, stirring carefully as it will bubble up.
Pour the toffee mixture over the graham crackers, spreading it evenly.
Bake in a 350°F oven for about 5 minutes.
Add chocolate chips on top and return to the oven for 2 minutes until the chocolate is melty but still holds its shape.
Spread the melted chocolate evenly over the toffee.
Add any desired toppings like toffee bits, sliced almonds, M&Ms, or peanut butter cups.
Let it sit until hardened, preferably chilling for about an hour before breaking apart and serving.
Store in an airtight container in the refrigerator to last at least two weeks.
