Cut 1 pound of mushrooms into slices that are 1 cm thick.

Thinly slice 4 cloves of garlic.

Roughly chop a handful of fresh parsley.

Heat a large fry pan over medium heat and add 2 tbsp of extra virgin olive oil.

After a couple of minutes, add the sliced garlic and mix continuously for 15-20 seconds until fragrant.

Add the sliced mushrooms to the pan and mix to coat them in the olive oil, stirring every 1-2 minutes.

Pat dry 1/2 pound of raw jumbo shrimp with paper towels and season with sea salt and freshly cracked black pepper.

After 7-8 minutes, when the mushrooms are lightly sautéed and there's liquid in the pan, turn the heat up to high and cook for 2-3 minutes until most of the liquid has evaporated.

Add 2 tbsp of chopped fresh parsley to the mushrooms and season with sea salt and a dash of black pepper, then mix well and transfer to a large serving dish.

In the same pan, add another 2 tbsp of extra virgin olive oil and immediately add the shrimp in a single layer.

Cook the shrimp for 1 minute per side until just cooked through, about 2 minutes total.

Add the chopped garlic and 1/2 tsp of hot smoked Spanish paprika to the shrimp and mix until well combined and fragrant.

Remove the pan from heat and add the shrimp over the mushrooms, garnishing with fresh parsley.
