Cut the chicken breasts in half lengthwise and then cut them in half again to make them thinner.

Wrap each piece of chicken in plastic wrap and flatten them with a mallet.

Place the flattened chicken pieces in a large Ziploc freezer bag.

Pour in about 1/2 cup of pickle juice, remove excess air, and seal the bag.

Refrigerate the chicken for 30 to 60 minutes.

In a medium bowl, combine 1 cup of flour, 1/2 teaspoon of baking powder, 1 teaspoon of ground black pepper, 1/2 teaspoon of paprika, 1/2 teaspoon of chili powder, and 1/2 teaspoon of salt. Whisk together.

Remove the chicken from the pickle juice and dip each piece first in the egg wash, then in the flour mixture, back in the egg wash, and finally back into the flour mixture, shaking off excess flour each time.
