Gather ingredients: garlic, cumin, garden fresh tomatoes, Anaheim pepper, Thai chili, fresh oregano, chicken breast, lemons, red onion, dried oregano, olive oil, chicken stock, salt, and pepper.

Prepare the marinade by mixing 1 cup of extra virgin olive oil and 8 ounces of chicken stock in a bowl.

Add 4 cloves of minced garlic, salt, and pepper to the marinade.

Juice 2 lemons into the marinade, aiming for about ½ cup of lemon juice.

Add 2 tablespoons of dried oregano to the marinade mix.

Zest one lemon into the marinade without getting into the white part.

Place the chicken breasts in the marinade and refrigerate for at least 4 hours or overnight.
