Honey Mint Panna Cotta

The addition of honey and mint offers a refreshing twist, making it perfect for warm weather. Today, panna cotta is enjoyed globally, often customized with various flavors and toppings to suit local tastes.

In a medium pot, add 1 cup of heavy cream, 2 cups of half and half, and gelatin. Mix for 2 to 3 minutes without heat to dissolve gelatin.
Add the split vanilla bean and scrape out the seeds, then add 1 tbsp of sugar.
Bring the mixture to a simmer for 5 to 6 minutes, avoiding a full boil.
Stir in 1/3 cup of honey until dissolved and let the mixture cool completely.
Transfer the cooled mixture into pretty glasses, pouring about 1/2 cup into each.
Refrigerate for at least 8 hours or overnight to set.
Prepare the orange topping by zesting an orange and segmenting it into pieces, discarding the skin and membranes.
Combine the orange segments with the zest and sprinkle with cinnamon.
Remove the panna cotta from the fridge, top with the orange mixture, drizzled honey, and toasted almonds.
Serve with Moroccan mint tea made by steeping green tea bags with fresh mint and sugar.
