Austrian bread rolls, known as Semmel or Brötchen, have been a staple in Austrian cuisine for centuries, often served with breakfast or alongside meals. They symbolize the country’s rich baking traditions, showcasing the importance of bread in daily life. Today, these rolls are enjoyed in various forms across Europe, with each region adding its unique twist.

Olive oil reduces saturated fat while adding flavor.

Almond milk is lower in calories, while water is cost-effective.
Mix water, fresh yeast (or dry yeast), bread flour, and salt in a large bowl until there's no more dry flour.
Cover and let rest for 30 minutes.
With a wet hand, stretch the 4 sides of the dough and fold to the center.
Lift the dough and slap it back (technique called 'lift and slap').
Cover and let rest for another 30 minutes.
Repeat the stretch and fold process.
Let the dough rise until it has doubled in size, usually about 2 hours.
Dust work surface with flour and fold the dough to make it easier to divide.
Divide the dough into 8 equal parts.
Gently flatten each piece and roll it tightly into a ball, sealing the edges.
Let the balls rest for 10 minutes uncovered.
Fold each ball to tighten the surface and seal it.
Move to the baking pan and cover with a towel to let rise for 30 minutes.
Score the bread with a sharp blade or knife and sprinkle a little water around the bread.
Cover with another tray of the same size and bake at 430°F (220°C) for 20 minutes.
Remove the top tray and bake for 10 more minutes.
