Chicken Parmesan, or Pollo alla Parmigiana, hails from Southern Italy, where it was originally made with veal. This dish embodies the Italian tradition of transforming simple ingredients into a comforting meal, often served with pasta or a salad. Today, Chicken Parmesan is a beloved staple in Italian-American cuisine, enjoyed in homes and restaurants alike, with variations that include different cheeses and sauces.

Butterfly the chicken breasts using a sharp knife, laying your hand flat on top as a guide.
Use a meat mallet or rolling pin to pound the chicken breasts thin.
Season the chicken with all-purpose seasoning, salt, pepper, garlic powder, onion powder, Italian seasoning, and a sprinkle of chicken bouillon.
Heat 3 tablespoons of olive oil over medium heat in a skillet.
Add 3 cloves of minced garlic to the oil and toast until fragrant and lightly browned.
Add 1 diced shallot to the garlic and oil, mixing well.
Stir in 2 tablespoons of tomato paste and red pepper flakes, cooking to infuse flavors.
Add crushed tomatoes and mix, then add basil and 1/4 cup of water, letting the sauce simmer for about an hour.
Prepare garlic bread by cutting a hoagie roll open and mixing garlic and herb seasoning with melted butter and fresh parsley.
Spread the garlic butter mixture on the hoagie roll and toast in the oven for 5-6 minutes.
Prepare an egg wash and dip the seasoned chicken breasts into it, then coat with seasoned breadcrumbs mixed with fresh parmesan cheese.
Heat oil to 350°F and fry the chicken until golden brown and cooked through, checking for an internal temperature of 165°F.
Remove the chicken from the oil, sprinkle with finishing salt, and top with freshly grated parmesan and mozzarella cheese.
Place the chicken in the oven until the cheese is melted and bubbly.
Cut the chicken into bite-sized pieces for the sandwich.
