This dish embodies the Italian tradition of transforming simple ingredients into a comforting meal, often served with pasta or a salad. Today, Chicken Parmesan is a beloved staple in Italian-American cuisine, enjoyed in homes and restaurants alike, with variations that include different cheeses and sauces.

Chop a few tablespoons of fresh parsley, stripping the leaves from the stems and giving it a nice chop.
Cut the chicken breasts down the middle to create thinner filets for quicker cooking and more surface area for flavor.
Pound the chicken filets using plastic wrap as a splatter guard to avoid mess.
Set up a dredging station with three bowls: one for flour, one for eggs, and one for breadcrumbs.
In the egg bowl, crack 2 eggs, season with a pinch of salt and pepper, and whisk together.
In the flour bowl, add 1/3 cup of flour, season with salt and pepper, and mix.
In the breadcrumbs bowl, combine 1 cup of panko breadcrumbs, 1/2 cup of grated Parmesan cheese, 1/2 cup of seasoned Italian breadcrumbs, and 2 tablespoons of chopped parsley. Mix well.
Preheat the oven to 425°F.
Dip each chicken filet in the flour mixture, shake off the excess, then dip in the egg mixture, letting it drip off, and finally coat in the breadcrumb mixture, pressing down to ensure it sticks. Place on a baking sheet.
Pour about 1 cup of olive oil into a large pan and heat over medium-high until shimmering.
Fry the chicken filets in batches, about 2-3 at a time, for 3-4 minutes per side until golden brown. Watch carefully as the first side cooks quicker due to the initial drop in oil temperature.
Remove the fried chicken from the oil and place back on the baking sheet.
Top each chicken filet with 1/3 to 1/2 cup of marinara sauce, followed by a generous sprinkle of shredded mozzarella cheese and 1 tablespoon of freshly grated Parmesan cheese.
Place the baking sheet in the oven and bake at 425°F for 15-20 minutes or until the cheese is golden and bubbly.
