Start by making the marinara sauce from scratch using san marzano peeled tomatoes, crushing them by hand or with a potato masher for desired chunkiness.
Add avocado oil or olive oil to a pot over medium heat, then add minced garlic and cook gently to avoid burning.
Stir in about 1 tablespoon of tomato paste and cook for 2-3 minutes before adding the crushed tomatoes.
Add sugar, crushed red pepper (optional), salt, black pepper, fresh oregano, fresh basil, and onion powder to the sauce and let it simmer.
Prepare the chicken by laying down saran wrap, placing chicken breasts on top, covering with another piece of saran wrap, and flattening with a mallet or rolling pin.
Season the chicken with salt and optional emerald essence on both sides.
Prepare the dredging liquid by cracking 2 eggs into a bowl, adding milk, and seasoning.
Season the flour with salt, emerald essence, and Italian seasoning.
Dredge the chicken in the seasoned flour, then dip into the egg wash, allowing excess to drip off, and finally coat in seasoned breadcrumbs, ensuring even coverage.
Place the breaded chicken on a wire rack and set aside.
Boil noodles in salted water while heating vegetable oil in a skillet to 350°F (175°C).
Fry the breaded chicken for 3-4 minutes per side until golden brown, then place on a wire rack to drain excess oil.
Slice fresh mozzarella cheese for topping the chicken.
On each fried chicken cutlet, add shredded parmesan cheese, a scoop of homemade marinara sauce, and top with sliced mozzarella cheese.
Transfer the chicken to a preheated 425°F (220°C) oven until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is brown and bubbling.
Plate the dish by adding marinara sauce to the spaghetti, placing the chicken on top, and garnishing with chopped parsley.
