Prepare the breadcrumb mixture by using homemade breadcrumbs for better flavor and texture.
Add 1 teaspoon of garlic powder to the breadcrumbs.
Mix in 2 teaspoons of dried Italian herbs, 0.5 teaspoon of salt, and 0.5 teaspoon of black pepper to the breadcrumb mixture.
Optionally, add a pinch of red pepper flakes for heat.
Grate 0.5 cup of fresh parmesan cheese and mix it into the breadcrumb mixture.
Set the breadcrumb mixture aside.
Tenderize the chicken breasts by placing them between layers of parchment paper and pounding them with a rolling pin until they are even and tender.
Cut the chicken breasts in half lengthwise to create cutlets.
Set up a breading station with bowls of flour, egg mixture, and the breadcrumb mixture.
Dredge each chicken cutlet in flour, then dip it in the egg mixture, and finally coat it in the breadcrumb mixture, ensuring even coverage.
Heat a few tablespoons of olive oil in a skillet over medium heat until it sizzles.
Brown the breaded chicken cutlets in the skillet for 2-3 minutes on each side until golden.
If there's excess oil on the chicken, dab it with paper towels to reduce heaviness.
Layer the browned chicken cutlets in a baking dish and top each with fresh slices of mozzarella cheese.
Bake in the oven until the cheese is melted and bubbly.
