Introduce the dish: Spanakorizo, a traditional Greek vegetarian recipe for 3-4 people.

Prepare ingredients: 1 kg of frozen spinach, salt, pepper, enough olive oil to cover the bottom of the pot, 2 small leeks, 2 fresh spring onions, 1 roughly chopped onion, and 1/2 cup of Carolina rice.

Use a pressure cooker for faster cooking, which takes about 15-20 minutes.

Heat olive oil in the pressure cooker, then add the leeks, onion, and spring onions; sauté until shiny but not browned.

Add the spinach and sauté together with the leeks and onions for a couple of minutes.

Add 1/2 cup of rice, salt, pepper, and dill; season to taste.

Add a little bit of tomato puree (not enough to make a red sauce) and 1 cup of water for the rice.

Cook for about 10 minutes in the pressure cooker; if using a normal cooker, it will take 20-25 minutes until the rice is cooked.
