1 large brown onion, diced
1 leek, outer leaves removed, quartered lengthwise and finely chopped
1 bunch (300g) English spinach, washed and roughly chopped
¼ cup fresh dill, finely chopped
¼ cup parsley, finely chopped
¼ cup extra virgin olive oil
1 cup basmati rice, rinsed
2 ½ cups vegetable stock or chicken broth, heated
1 teaspoon sea salt
½ teaspoon freshly ground black pepper
Extra virgin olive oil
Fresh lemon juice
Feta cheese, crumbled (approx. 150g) - dairy free optional

In a large pot, heat the olive oil over medium heat.

Add the onion and leek, and sauté until softened and translucent, about 3-4 minutes.

Add the spinach to the pot and cook for a few minutes until wilted, stirring occasionally to combine with the onion and leek.

Stir in the rice, parsley, dill, salt, and pepper.

Pour in the hot vegetable stock or chicken broth and stir well to combine.

Reduce the heat to low, cover the pot, and let it simmer gently for about 15 minutes, or until most of the liquid is absorbed.

Once cooked, turn off the heat and let the rice rest, covered, for 5 minutes.

Remove the lid and fluff the rice with a fork.

Before serving, add an extra drizzle of olive oil, a very good squeeze of fresh lemon juice and spread the crumbled feta.
