In a large pot, add achote as the base.
Add crushed garlic, white onion, paiteña onion, and bell pepper to the pot.
Finely chop some chiriga leaves and add them to the pot for flavor.
Add a pinch of oregano, cumin, and salt to the mixture.
Stir the mixture to prevent it from sticking or burning while it cooks.
Grate green plantains using a fine grater, which takes some time but is not difficult.
Check the refrito to ensure it's ready, then add a bit of it to the grated plantains.
Blend a bar of peanut with water until it forms a thick sauce, then add it to the grated plantains and mix well.
Add a pinch of salt to the plantain mixture for flavor.
Fill the crab shells with the plantain mixture, which can be done by opening the shells carefully.
Form small balls from the remaining plantain mixture, adjusting the size to preference.
Check that the vegetables in the pot are well cooked and taste for salt.
Add the plantain balls to the pot first to cook them until firm, about 8 to 10 minutes.
After that time, add the crab meat to the pot, which cooks quickly, in about 10 to 15 minutes, to ensure the filling is cooked through.
After cooking, add chopped cilantro for garnish and serve.
