Prepare the haricots verts by trimming the ends and blanching them in boiling water for about 5 minutes until tender.

Finely chop the échalotes and ginger.

In a pan, melt the butter and sauté the échalotes and ginger until fragrant.

Add the haddock to the pan and cook until just done.

Stir in the crème liquide, chopped romarin, and menthe, and season with fleur de sel and poivre du moulin.

Serve the haricots verts topped with the haddock and sauce, garnished with lime juice.
