1 can of corn
3 eggs
½ onion, cut brunoise
Handful of herbs, any kind
4 tbsp flour (wheat, corn or rice)
salt
ground black pepper
1 tsp chili powder (optional)
1 cm ground fresh ginger (optional)
3 tbsp groundnut oil
3 tbsp Greek yoghurt (for sauce)
1 tbsp mayonnaise (for sauce)
1/2 lime (for sauce)
Handful of herbs (for sauce)
salt (for sauce)

In a bowl, combine the can of corn, eggs, brunoise-cut onion, and herbs.

Add the flour, salt, black pepper, chili powder, and ground ginger to the mixture and stir until well combined.

Heat the groundnut oil in a pan over medium heat.

Spoon the corn mixture into the pan to form fritters and cook until golden brown on both sides.

For the sauce, mix the Greek yoghurt, mayonnaise, lime juice, and herbs in a separate bowl, adding salt to taste.

Serve the corn fritters warm or cold with the sauce on the side.
