Roast red bell peppers over an open flame until charred, about 5 minutes, then cover with plastic wrap to steam for a few minutes.
Peel the skin off the roasted peppers, making a cross on top to help remove the skin.

Cut the peeled tomatoes into quarters, removing the seeds if desired.
Grind the roasted peppers and tomatoes using a KitchenAid attachment or a manual grinder.
Cook the ground mixture in a pan over low heat for about 2 hours, stirring occasionally, until thickened.
Add salt to taste during the cooking process.
