Prepare a brine solution by boiling 1 liter of water with 2 tbsp sea salt, 2 tbsp table salt, 1 tbsp all-purpose seasoning, 1 tbsp coriander seed, dried bay leaves, fresh thyme, garlic, and onions for about 2 minutes.
Cool the brine and add sliced lemons.
Clean the turkey (3.2 kilos) by removing giblets and rinsing with lime juice and water.
Combine the cooled brine with cold water and submerge the turkey for approximately 12 hours in the fridge.
After brining, rinse the turkey lightly with water and pat it dry.
Prepare a seasoning mix with homemade all-purpose seasoning, chicken seasoning, garlic powder, paprika, smoked paprika, ginger powder, chili powder, and salt.
Crush garlic and mix with fresh rosemary, fresh thyme, and salted cooking butter.
Massage the seasoning mix thoroughly into the turkey, including under the skin.
Stuff the turkey with fresh green apples, lemon, garlic, onions, and herbs.
Tie the turkey with butcher's twine for security.
Place the turkey in a roasting pan, tucking the wings under.
Preheat the oven to 175°C (approximately 347°F).
Roast the turkey covered with aluminum foil for the first 2 hours, then uncover and roast for an additional 1.5 hours, basting occasionally with the released juices.
Check for doneness by inserting a kebab stick to ensure no bloody juices come out.
Let the turkey rest before serving.
